GARLIC SHRIMP & SPINACH

INGREDIENTS:

  • ½ lb fresh or frozen shrimp
  • 2 cups spinach
  • ¼ cup walnuts
  • 2 lemons
  • ¼ cup white wine
  • ¼ cup olive oil (optional)
  • 4 garlic cloves minced

 

DIRECTIONS:

  • In large pan heat garlic with lemon juice, half of the portion of white wine and half the portion of olive oil (if you chose to use it…if not, add a little extra white wine).
  • Once the garlic starts to brown, add the shrimp.  (If they are frozen, thaw them first).  They will cook fast.
  • As they start to turn pink, add the spinach and the remainder of the white wine and olive oil.
  • Sautee everything together until shrimp are completely pink and spinach is thoroughly cooked.
  • You can add chopped sweet potato to this if you’d like.  Take an already cooked sweet potato, dice it and throw it in for the last minute or so and Sautee it with the shrimp and spinach.  You can do the same with brown rice, quinoa or whole-wheat pasta.
  • Once you plate the food, sprinkle with walnuts.  Sprinkle *Veggie brand parmesan cheese on top if you’d like.
