TOFU SHIITAKE KALE STIR FRY

Cooking Time: 13-15 minutes
Produces about 4 servings
INGREDIENTS:
- ½ pound shiitake mushrooms
- 1 tablespoon olive oil
- 1-2 cloves crushed garlic
- 1 bunch kale, chopped
- ½ pound stir-fry veggies
- Pinch of sea-salt
DIRECTIONS:
- Warm oil in pan on medium heat with finely chopped garlic for about 3 minutes
- Add shiitake mushrooms and veggies and stir-fry for 4-5 minutes
- Add kale and tofu and stir-fry for 2-3 minutes
- Add a splash of water and pinch of sea salt to pan, cover and let steam for 4 minutes
