Chocolate Coconut Protein Haystacks Recipe
-1 block unsweetened cocoa
-1 TB coconut oil
-1 scoop chocolate whey protein
-1/4 cup chopped almonds
-3 TBSP unsweetened shredded coconut
-2 packets stevia/xylitol
– Melt cocoa block in microwave for 1 minute.
-Mix in coconut oil until it has melted.
– Mix all remaining ingredients into bowl.
-Lay out wax paper on flat pan and scoop 10 small “stacks”.
– Sprinkle some coconut shreds on top for decoration.
-Put pan in freezer and will solidify in 10-15 minutes.
