TOFU SHIITAKE KALE STIR FRY

Cooking Time: 13-15 minutes
Produces about 4 servings

INGREDIENTS:

  • ½ pound shiitake mushrooms
  • 1 tablespoon olive oil
  • 1-2 cloves crushed garlic
  • 1 bunch kale, chopped
  • ½ pound stir-fry veggies
  • Pinch of sea-salt

DIRECTIONS:

  1. Warm oil in pan on medium heat with finely chopped garlic for about 3 minutes
  2. Add shiitake mushrooms and veggies and stir-fry for 4-5 minutes
  3. Add kale and tofu and stir-fry for 2-3 minutes
  4. Add a splash of water and pinch of sea salt to pan, cover and let steam for 4 minutes
